Where did I disappear to???

WOW!  It's been a long time!  I actually forgot I even had this blog!  How sad is that?  Time to get busy and start cooking and posting my recipes!!!  I love to cook!  So watch for recipes to come!!

Chicken Fajitas

Chicken Fajita
These were very good and I will definitely be making them like this again









2 Pounds Chicken Tenders, Sliced Thin
1 Med Onion, Sliced Thin
1 Each Red 2, Green Pepper, Orange Pepper and Yellow Pepper, Sliced Thin
6 Cloves Garlic, finely minced
2 T Olive Oil
1/2 tsp Salt
1/2 tsp Black Pepper
1/2 tsp (Penzy Spices) Arizona Dreaming
1/2 tsp Just a Pinch, Scicilian Blend
1 -1/2 tsp Chili Powder
1/2 tsp Thyme
1 tsp Ginger
1 tsp Cumin
2 tsp Oregano
1-1/2 Ground Coriander
1 T Lime Juice 
1 T Lemon Juice


In a large skillet, over med-high heat, put olive oil and sliced onions in a skillet and fry up the onions til soft.  Add the sliced chicken, garlic and spices.  Cook until the chicken is cooked through.  Add all the sliced peppers and cook until desired tenderness.


Put chicken mixture into individual flour tortillas.  Top with desired toppings and enjoy!!!

So, today I tried Reese's Peanut Butter Bars.  The recipe says they are supposed to taste just like eating a Reese's Peanut Butter Cup.  I think that's going a bit too far.  I went to make them and I was out of Smooth Peanut Butter!  That almost never happens.  So, I used crunchy peanut butter since that was all I had in the house.  That in itself was totally different (although I've been told there are Reese's Crunchy Peanut Butter Cups out there.  My first couple of bites I thought were kind of grainy.  Not exactly the right consistency. All in all, pretty good flavor. My husband stated he thought it needed a different type of chocolate, like maybe a Heryshey's candy bar.    My 10 year old loved them....she came back for seconds.  I LOVE chocolate and I LOVE peanut butter but I'm not entirely sure I'd go back for seconds.  Here's the recipe...   Go ahead and try it.  Let me know what you think!

Reese’s Peanut Butter Bars(from Let’s Dish)
Ingredients
1 cup butter melted
2 cups graham cracker crumbs (use the boxed kind, or grind them in a food processor. Tiny granules.)
2 cups confectioners’ sugar
1 cup + 4 tablespoons peanut butter
1 1/2 cups semisweet chocolate chips
Directions
In a medium bowl, mix together the melted butter, graham cracker crumbs, confectioners’ sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9×13 inch pan. In a metal bowl over simmering water, or in the microwave, melt the chocolate chips with the peanut butter, stirring occasionally until smooth. Spread over the peanut butter layer. Refrigerate for at least one hour before cutting into squares.

So, here's another great recipe I found...  

Grilled Bruschetta Chicken
WW Points = 5

Ingredients:
4 small boneless, skinless chicken breast halves
1/4 cup sun dried tomato vinaigrette dressing, divided
1 tomato, finely chopped
1/2 c shredded low moisture part skim mozzarella cheese
1/4 c chopped fresh basil

Directions:
Heat grill to medium heat.
Cover half the grill grate with sheet of heavy-duty foil. Place chicken in large resealable plastic bag.  Add 2 Tbsp. dressing; seal bag.  Turn bag over several times to evenly coat chicken with dressing.  Refrigerate 10 min. Remove chicken from bag; discard bag and dressing.
Place chicken on uncovered side of grill; cover with lid. Grill 6 min. Meanwhile, combine remaining dressing, tomatoes, cheese and basil.
Turn chicken over; place on foil.  Top with tomato mixture. Grill, covered, 8 minutes or until chicken is done (165 degrees F).
Yield: 4 servings (1 chicken breast per serving)

One Pan Goulash

This recipe was found on the web site Sisterhood of the Shrinking Jeans..   I made it for dinner and it was so DELISH!!

1 # lean ground beef
1 medium onion, diced
4 cloves garlic, minced (I used about 6)
1 zucchini, shredded (I didn't have any so I didn't include this)
1 can diced tomatoes (I used olive oil and garlic diced tomatoes), do not drain
2 cups low sodium beef broth
4 T tomato paste
2 T dried Italian herbs (basil, rosemary, oregano)
1 cup uncooked whole wheat elbow macaroni
1 cup mushrooms (again, I didn't have any so they weren't added)

Heat a large skillet over med high heat.  Add the ground beef, onion and garlic.  Cook til the beef is browned, drain well. Add the zucchini and mushrooms, saute til soft.  Add herbs, tomato paste, tomatoes (including juice) and broth.  Stir well and add salt to taste.  Add dry macaroni.  Bring to a boil then reduce to simmer for 12-14 minutes or until macaroni is soft.  Serve with shredded parmesan.

So, today I'm reading up on a blog I found.  Sisterhood of the Shrinking Jeans!  Isn't that the funnest name!? I loved it!  Sucked me right in!  Well, I have decided that I am tired of avoiding the Dr. because I don't want to weigh in.  Tired of my knees hurting!  Tired of having High Blood Pressure!  It's seriously TIME to do SOMETHING!  Anything..  I just need to get off my butt and get busy!  Not only do I need to strengthen my physical heart but I also need to strengthen my spiritual heart.
